Caprese Pasta

  • Ripe tomatoes, diced
  • Fresh mozzarella balls, diced (these are usually found in a carton of water in the deli section of the grocery store)
  • Fresh basil
  • Salt, pepper
  • Good quality extra-virgin olive oil
  • Optionally, balsamic vinegar

Add to hot pasta and cover to allow the cheese to melt a bit. Serve.
